All our crops are located in the municipality of Barbara, between Contrada Coste and Antica Contrada Molino. They flank a stretch of the Nevola river, far away from big roads and industrial areas. They extend for just 5.5 hectares: we take care of them, square meter by square meter, and we protect their purity and biodiversity in every way we can.
To avoid pesticide contamination from the surrounding fields, we have enclosed them within stable perimeter crops, such as lavender, honey bee flowers, legumes and sunflowers.
We have also created some buffer zones on the boundaries with trenches, rivers and passageways, and they are mostly occupied by beehives and spaces where some bee-keepers can do their work.
We follow Good Agricultural Practices, with crop rotation – choosing products for human consumptions that are then processed by local companies – and we are gradually implementing organic farming methods.
For the 2022 production, we cultivated the Nonno Mariano and Farah durum wheat varieties, the first sown for about one fourth of the area, and the second for three fourths.
We opted for a 1:4 ratio to obtain an end product of excellent quality, due to the physiological characteristics specific to each variety and their combination.
The farming techniques applied supported the crop in all its phases.
After the harvest, we bring our wheat to the Italcer Mill, in Osimo, who ensures the highest quality control standards and processing.
The mill’s staff performs a series of quality checks and we also require some extra testing, to obtain flour of the finest quality:
The milling process is carried out with a roller mill, that gives us our thick flour.
We entrust the transformation of the flour into the final product to three artisan pasta factories, each one specializing in specific formats. We selected them because they are reliable, because of their high-quality processing, and – most of all – because they only employ pure water in their recipes.
